Reporting to Brewing Manager, the Assistant brewing manager will lead, coordinate, and control the activities of production department. He evaluates section work progress and takes on time corrective actions and confirm whether the work plans are going efficiently. Maintains compliances on IMS, with established policies and procedures for the department.
Roles and Responsibilities
Under close supervision of Brewing manager,
He/She plans, organizes, leads and controls all production related activities.
Assisting in the brewing process, including operating brewing equipment, monitoring fermentation, and ensuring quality control.
Responsible for the coordination of the entire brewing process. To perform this role, She/he must manage staff, schedule beer productions, ensure adequate raw materials are available, and ensure that the brewery’s equipment are in safe and operating conditions.
Spend a great deal of time on the floor of brewery, making sure that staff are working efficiently, and the production process is running smoothly.
Lead a production staff capable of meeting/exceeding the goals of the company.
Work closely with the brewing, quality and maintenance team to achieve production targets and maintain quality standards.
Managing hygiene on the production line and ensuring that food safety standards are maintained.
Keeping track of raw materials and chemicals, ensuring accurate inventory and quality management.
Ensure that all production activities are conducted in alignment with safety, quality and sustainability initiatives.
Provide relevant training, coaching, and mentoring to team members.
Conduct regular performance evaluations in accordance with Company policy and provide appropriate disciplinary measures when necessary.
Work closely with the brewing manager to generate production schedules, trials and improvement activities and ensure that they are met.
Maintain integrity of the main brewery and ensure there is no cross-contamination by continually improving sanitation of all production facilities including the brewing, fermentation cellar, and filtration areas.
Develop and maintain Standard Operating Procedures (SOPs) for all aspects of production: brewing, fermentation, Yeast management and GMPs.
Develop performance and productivity metrics for all production areas and hold team members accountable for achieving these goals.
Develop and maintain proper yeast management practices to ensure consistent fermentations that meet quality standards and keep pace with desired production goals.
Own production sustainability goals and seek out innovative solutions to not only ensure achievement but continually enhance brewery performance.
Prepare monthly, quarterly and yearly report of the production activities.
Promotes safety, quality and hygiene in the company.
Replace Brewing manager and team leaders during different leaves.
Work other production related tasks directed by the brewing manager.
